A high-performance biopolymer produced by fermentation, xanthan gum is the thickener and stabilizer of choice across food manufacturing, personal care, oilfield chemistry, and pharmaceutical formulation.

Xanthan gum is made by fermenting glucose with the bacterium Xanthomonas campestris — the same organism that gives the product its name. The result is a polysaccharide with remarkable thickening power: tiny quantities dramatically increase viscosity, and the gel it forms stays stable across a wide range of temperatures, pH levels, and salt concentrations.
